Ampalaya Shrimp Salad

ampalaya_shrimp_saladA very simple meal, quick to make and with lots of taste.

You will need

  • 1 medium sized ampalaya, chopped
  • 1 medium tomato, sliced into rings
  • 1 large white onion, chopped
  • 1 cup cooked shrimps, shelled and de-veined

For salad dressing

  • 1 tbsp. vinegar
  • 2 tbsp. olive oil
  • ½ tsp sugar (optional)
  • salt and pepper to taste

Directions

  1. Slice the Ampalaya in half (lengthwise) and remove seeds by scraping with spoon.
  2. Cut each part slant ways into bite-size pieces.
  3. Press salt to the bits repeatedly to squeeze out the bitter juice.
  4. Wash over running water, dry and place in salad bowl. Then toss in the tomatoes, onions and shrimps.
  5. In another bowl, combine vinegar, olive oil, sugar, salt and pepper for the dressing.
  6. Mix well. If desired, salted duck eggs maybe added for flavor. Enjoy.
